This Barbera is produced with grapes coming exclusively from our Castagnole delle Lanze vineyards.
The harvest, manual, is carried out during the first fortnight of October and the grapes are scrupulously selected are quickly started to vinification.
Alcoholic fermentation with maceration lasts about 12 days during which the temperature is controlled if exceeds 30° C to obtain the maximum extraction of polyphenolic substances.
The malolactic fermentation reduces the acidity of the wine, typical of the vine, giving it harmony and balance.
Following an aging in small oak barrels of medium capacity for about six months and another 6 months in bottle.
The "Cunsej" is introduced on the market in the second year after the harvest.
